METHOD

Fry chicken breasts for 5min in olive oil

Sauce : meanwhile chop hard boiled egg very fine.

Chop fresh basil in fine pieces.

Mix chopped hard boiled egg with chopped basil & hole grain  mustard.

250g rice stick noodles
1 tablespoon peanut oil
500g beef eye fillet, sliced thinly
1 clove garlic, crushed
1 tablespoon finely chopped fresh lemon grass
4 small red & orange sweet peppers, sliced in quarters
⅓ cup (80ml) lemon juice
1 tablespoon fish sauce
100g baby rocket
1 cup (80g) bean sprouts
½ cup loosely packed fresh coriander leaves
3 spring onions, sliced thinly
4 baby marrows, sliced in quarters
½  packet mushrooms, sliced
Place noodles in large heatproof bowl, cover with boiling water; stand 5 minutes or until tender, drain.

Meanwhile, heat half of the oil in wok or large frying pan; cook beef, in batches, until browned.

Heat remaining oil in wok; cook garlic, lemon grass and sweet peppers until fragrant. Return beef to wok with juice and sauce; stir-fry until heated through.

Add noodles; stir-fry until combined. Stir in remaining ingredients; serve immediately.

Basil
Basil is a common herb that is commonly used in Italian cuisine. 500ml Macaroni or Penne
½ packet cherry tomatoes
1 hand full chopped basil
2-3 rings Feta Cheese
2 T/Spoons Basil Pesto
Grounded black peppercorn
METHOD

Place Penne pasta  in large heatproof bowl, cover with boiling water; stand 5 minutes or until tender, drain.

Meanwhile, chop the Feta Cheese and Basil in smaller pieces.

Drain the pasta when cooked.

Place pasta in mixing bowl or serving dish and mix 2T/spoons Basil Pesto into the pasta.

Add whole cherry tomatoes, chopped Feta Cheese and Basil

Sprinkle black pepper and lightly mix together.
If preferred, you can even liquidise the boiled egg and basil together with the hole grain mustard.

Serve as a sauce on top of the fried chicken breasts.
